Soy Sauce Free Seitan Recipe   4 comments

Seitan is a great soy free source of vegan protein, also known as wheat meat.  Find out more about seitan here.

Most already made seitan that you’ll find in your grocery store will have soy sauce in it, as will most seitan recipes.  So here’s one without!  Enjoy:

Seitan:

1 cup vital wheat gluten (you can find this at Whole Foods, or any health food grocery)

1 tsp garlic powder

1 cup water

Broth:

2 cups vegetable broth

1 cup water

1 tsp salt

1 tbsp agave sweetener

1 tsp garlic powder

1/2 tsp dried ginger

1/2 tsp dill

Mix vital wheat gluten flour and garlic together.  Add water to the mixture and stir into dough.  Knead dough for about a minute.  For firmer seitan knead dough longer.

While you are making the dough, mix broth ingredients together and bring to a boil.

Cut dough into desired pieces, strips, cubes, chunks, etc.  Place into boiling broth.  I place each piece in separately, to avoid them clumping together when they cook.

Cook in broth for one hour (or until broth cooks down, whichever is first), lowering heat as needed.

Drain excess broth.

Now you have seitan!  Season it and add to a stir fry, pasta/noodle dish, sandwich, etc.  Or store in the fridge for up to 6 days, freezer 6 months.

Yields 4 servings
